為評估所選育畜試白絲羽烏骨雞與民間烏骨雞雜交利用之可行性,以民間生產場烏骨雞公雞配畜試 白絲羽烏骨雞母雞,所得之雜交後裔進行 16 週齡胸肉一般營養與胺基酸組成分析,以供商業生產 肉用烏骨雞之參考。雜交後裔雛雞掛上個別翼號,飼料採任飼,以平飼方式飼養。雞隻於 16 週齡 屠宰 12 隻,取樣各公、母各 6 隻胸肉,進行一般營養與胺基酸組成分析。分析結果 16 週齡胸 肉一般營養組成,其公雞與母雞之間無顯著差異,平均含量水分為 73.5 ± 0.60%、蛋白質為 25.0 ± 0.72%、脂肪為 0.03 ± 0.07%、灰分為 1.50 ± 0.18%、鈣為 63.5 ± 9.10 ppm、鋅為 6.27 ± 0.93 ppm、 鐵為 8.52 ± 1.75 ppm。分析胸肉胺基酸之組成,公雞與母雞 16 週齡胸肉平均含天門冬胺酸、羥 丁胺酸、絲胺酸、麩胺酸、甘胺酸、丙胺酸、甲硫胺酸、白胺酸、離胺酸、精胺酸、總蛋白質含量 分別為 2.37 ± 0.06 與 2.24 ± 0.04%、1.14 ± 0.03 與 1.08 ± 0.02%、1.01 ± 0.02 與 0.94 ± 0.03%、3.70 ± 0.13 與 3.41 ± 0.09%、1.04 ± 0.02 與 1.00 ± 0.03%、1.44 ± 0.03 與 1.36 ± 0.02%、0.71 ± 0.04 與 0.58 ± 0.14%、2.05 ± 0.07 與 1.93 ± 0.05%、2.22 ± 0.05 與 2.15 ± 0.04%、1.60 ± 0.05 與 1.52 ± 0.03%、 23.8 ±0.62 與 22.9 ± 0.46%,以上胺基酸含量皆以公雞顯著大於母雞(P < 0.05)。
The experiment was to evaluate the availability of LRI female white silky chicken crossed with commercial male silky chickens. The progeny was used to determine the nutrient and amino acids of breast meat at 16 weeks of age for the reference of the production of commercial silky chicken. The chicks were tagged with wing number individually. Feed was provided ad libitum. Birds were raised on floor. A total of 12 birds were sacrificed at 16 weeks of age. Breast meat from 6 males and 6 females were used to analyze nutrient and amino acid composition. The results indicated that there was no significant difference on breast nutrient composition between males and females. The average nutrient contents in breast meat were moisture 73.5 ± 0.60%, protein 25.0 ± 0.72%, fat 0.03 ± 0.07%, ash 1.50 ± 0.18%, calcium 63.5 ± 9.10 ppm, zinc 6.27 ± 0.93 ppm, and iron 8.52 ± 1.75 ppm. The amino acid and protein contents of breast meat in males and females were Aspartate 2.37 ± 0.06 vs. 2.24 ± 0.04%, Threonine 1.14 ± 0.03 vs. 1.08 ± 0.02%, serine 1.01 ± 0.02 vs. 0.94 ± 0.03%, Glutamate 3.70 ± 0.13 vs. 3.41 ± 0.09%, Glycine 1.04 ± 0.02 vs. 1.00 ± 0.03%, Alanine 1.44 ± 0.03 vs. 1.36 ± 0.02%, Methionine 0.71 ± 0.04 vs. 0.58 ± 0.14%, Leucine 2.05 ± 0.07 vs. 1.93 ± 0.05%, Lysine2.22 ± 0.05 vs. 2.15 ± 0.04%, Arginine 1.60 ± 0.05 vs. 1.52 ± 0.03% and total protein 23.8 ±0.62 vs. 22.9 ± 0.46%. For amino acids, males were significantly higher than the females (P < 0.05).
