本試驗旨在探討利用葵花油、玄米油和苦茶油等植物油所製成之植物油角,取代部分中式 香腸之豬油角後,對於中式香腸脂肪酸組成與膽固醇含量之影響。各組香腸皆添加 80% 豬前腿肉,對照組(P)之豬油角添加量為 20%,處理組為添加 10% 豬油角和 10% 植物 油角,分別為葵花油角(S)、玄米油角(R)及苦茶油角(C)三組。各組香腸完成後分別 測定其脂肪酸組成與膽固醇含量並探討其變化。試驗結果顯示,P 組之棕櫚酸(C16:0) 及硬脂酸(C18:0)含量最高,分別為 23.42% 及 12.31%。油酸(C18:1)以 C 組最高, 亞麻油酸(C18:2)以 S 組最高,飽和脂肪酸含量以 P 組 37.50% 最高,顯著高於其他 三組。單元不飽和脂肪酸以 C 組 44.48% 最高,多元不飽和脂肪酸 S 組(25.50%)顯著 高於其他三組。不飽和脂肪酸總量最高為 C 組(65.90),而 P 組(62.53%)顯著低於其 他三組。膽固醇含量以 P 組(66.08%)最高且顯著高於 R、C 兩組。綜上所述,以植物 油角取代 50% 豬油角,中式香腸不飽和脂肪酸含量顯著上升,飽和脂肪酸和膽固醇含量 皆有顯著降低趨勢。

英文摘要

This experiment was conducted to analyze the contents of the fatty acid and cholesterol of Chinese-style sausages adding cubed vegetable oils. The control group (P) contained 80% picnic shoulder and 20% cubed pork fat, and treatment groups contained 80% meat, 10% cubed pork fat and 10% cubed vegetable oil which included sunflower oil (S), rice bran oil (R) and camellia oil (C) groups respectively. The results showed control group had the highest palmitic acid (23.42%) and stearic acid (12.31%) contents. Treatment C and S had the highest oleic acid and linoleic acid contents respectively. The saturated fatty acid (SFA) content of control group (37.50%) was significantly higher than other treatments. The monounsaturated fatty acid (MUFA) and polyunsaturated fatty acids (PUFA) contents in treatment C (44.48%) and S (25.50%) were significantly higher than other treatments respectively. The unsaturated fatty acids (UFA) contents of control group (62.53%) was significantly lower than the other three treatments. Cholesterol content in P group (66.08%) was significantly higher than treatment R and C. In conclusion, the SFA and cholesterol contents were decreased, and UFA contents were increased significantly through replacing 50% cubed pork fat of Chinese type sausage with cubed vegetable oils.
