游離脂肪酸對於生乳品質的管控十分重要,許多國家已檢測乳中游離脂肪酸(free fatty acids, FFAs)含量,做為生乳品質判定的指標之一。本試驗檢測國內生乳中 FFAs 含量, 分析生乳中FFAs 與乳成分及體細胞數之關聯性,做為生乳品質與泌乳牛乳房健康的參考 指標。試驗自 2016 年 1 月至 10 月,每月採集生乳樣本,檢測乳脂肪、乳蛋白質、乳 糖、無脂乳固形物、總固形物及體細胞數(somatic cell count, SCC)等項目,並依據乳樣 中 SCC 高低區分為高、中、低三等級,結果發現,不同SCC 等級生乳之間,乳糖及乳 蛋白質含量的下降可能由於乳房健康狀態或乳牛營養狀況不佳,造成 FFAs 上升。SCC 上 升顯著使 FFAs 上升(P < 0.01)且造成乳糖下降(P < 0.01);而生乳中 FFAs 的 上升造成潛在性酮症指標 F/P 比值及 F/L 比值顯著上升(P < 0.01)。本研究結果顯 示,FFAs 檢測數據可以整合入乳牛群性能改良(Dairy Herd Improvement, DHI)報表中, 做為飼養管理、維持牛群健康、能量平衡及維持生乳品質的參考指標。

英文摘要

Free fatty acids (FFAs) in fat are important indicator of raw milk quality. The aim of this study was to analyse the relationships and quantify effects of dairy cow mastitis on FFAs. Individual milk samples came from Holstein cows monthly. Sampling was from January 2016 to October 2016, second to fourth lactation, 30-90 days in milk, twice of milking a day. The total number of 15,144 records were from 2,942 heads. Milk samples were classified into 3 groups according to somatic cell counts (SCC): A 150,000, healthy; B from 150,000 to 1,000,000, subclinical mastitis; C > 1,000,000/mL, subclinical and clinical mastitis. The mastitis state (SCC) deteriorated milk quality by increase of FFAs and reduced lactose. The correlation coefficient of SCC with FFAs and lactose were 0.41 (P < 0.01) and -0.43 (P <0.01), respectively. On the contrary, milk energy quotients fat/protein (F/P) and fat/lactose (F/L) increased with growing FFAs. The correlation coefficient of FFAs with F/P and F/L ratios were 0.23 (P <0.01) and -0.11 (P < 0.01), respectively. Significant relationships of SCC and both milk ketosis quotients (F/P and F/L) to FFAs show on diagnostic ability of FFAs content not only regarding milk secretion disorders but also dairy cow energy troubles. Values of FFAs in regular DHI milk recording can serve to control the health of dairy cows in terms of suspicion from secretion or energy balance disorder occurrence or raw milk quality inconsideration of quality and shelf-life of resulting milk products.
