飲食安全在國內外越來越受到重視,隨著國內食品事件接二連三發生,不僅影響國家貿易經濟,更使人深感憂慮,在消費者行為亦有相當程度影響。因此瞭解食品標籤資訊以增進食用安全對消費者是一個重要的議題。本研究探討食品標籤資訊與消費行為之相關性,以大學生為例收集261份樣本並以結構方程模型驗證研究模型,。結果顯示,學生族群對食品標籤資訊上的保存期限最為重視,而女生則比男生更重視食品標籤資訊,且對食品標籤資訊重視程度愈高則會有愈正向的食品消費行為。本研究因此建議教育單位可於生活教育中加強食品標示資訊方面知識,以提升學生對標示資訊的認知與食品安全的選擇行為。

英文摘要

Food safety has been attaching more and more importance at home and abroad. As food scare breaks out one after another in Taiwan, food safety issues not only affect national economic activities and trade, but also concern consumers, posing a significant influence on their behaviors. Thus seeking food safety through understanding information provided on food labels is an important issue for consumers. The study investigates the relevance between information provided on food labels and consumer behaviors. 261 respondents were collected from university students, and structural equation modeling was applied to verify the research model. The results show that students pay most attention on the expiratory date, and females are more attentive to information on food labels than males. Students attaching more importance to food labels show more positive food consuming behaviors. Therefore, we suggests that education institutes can enhance students’ knowledge related to information provided on food labels as part of the curriculum, so that students can make an informed choice to ensure food safety.
