目前市售的鹹魚，普遍均有鮮豔的顏色，為避免業者濫用著色劑，確保消費者 在食用時的安全，本局函請各縣市衛生局於八十八年八月至十月間，就傳統及超級 市場抽送鹹魚檢體97件進行著色劑之檢驗。 結果發現，在鹹魚檢體97件中，檢出規定外著色劑者31件，其中使用orange II著色劑者有21件，metanil yellow者有4件，同時使用orange II及metanil yellow 者有6件。以上31件不符規定檢體，已分別送請原抽送衛生局作行政處理中。本調 查係本局之比較檢驗，曾於八十八年十一月十八日發布新聞在案。
英文摘要
In order to assess food coloring in salted fish, a total of 97 samples were purchased in Taiwan area from August to October in 1999. Results showed that illegal coloring agents (orange II and metanil yellow) were detected in 31 samples.
