中文摘要

本研究利用質性深度訪談的方式來瞭解餐旅系專業實習同學,在餐旅實習前、後的社會化歷程,共有八位受訪者接受訪談。訪談題目包括進入餐旅系就讀的動機,對實習課程的瞭解程度,開始實習後心理與生活的衝擊面,以及實習後態度與工作價值觀的觀點改變。研究發現在實習之前,實習生實習態度深受個人屬性與家庭所影響。而當學生開始進入餐旅業實習之後,個人的背景因素雖持續地影響著學生,但因需要花費許多時間實習,迫使學生必須改變原本的生活作息,加上與餐旅產業(人事制度)密集互動等交錯現象,開始衝擊學生的態度與價值觀,心理及生活上也逐漸產生不同層面的轉變,終而衝擊原先抱持的工作價值觀。研究者最後也提出實習前、中、後相關建議。

英文摘要

This research is a qualitative approach with interviewing, to explore before interning and after interning the hospitality students' socialization process. There are eight respondents. The interviewing questions are including: the motivations of enrollment, the understanding of hospitality practical courses, different psychological and physical impacts during internship, and after interning the change of attitude on pracitcal courses and work values. The research found that before interning, individual attribution, family, and school are affect the students' attitude. While students expose to hospitality companies, students spend much time for internship and this situation forces them to change their original life. Besides, students continually contact and interact with hospitality industry, their psychological and physical attitude and value change gradually until the end of internship. Finally, researchers also give some advices on internship process.
