營養是民生重要議題,民生學院學生在其專業領域需要具備營養相關知能。本研究的目的在了解民生學院學生營養認知、飲食態度及六大類食物攝取量,探討個人屬性在以上構面、體型、三餐進食頻率、外食頻率之差異性或相互之關聯性。採取問卷調查的方式,以臺北市某大學民生學院學生?研究對象,回收有效問卷共376份,將問卷資料進行描述性統計、t檢定、單因子變異數分析、Scheffe事後檢定及卡方分析。研究結果如下:大學生對營養認知、飲食態度雖然表現良好,但在實際六大類食物的攝取量方面尚不?均衡,在六大類食物攝取方面以居住於自家者比外宿者?佳。女性、年齡大於22歲、外宿者在部份營養認知或飲食態度上表現較佳。三餐進食頻率與學制有顯著關聯,夜間上課的學生中有高達三成屬於低頻率進食群組;學生住宿狀況與其三餐外食頻率有顯著關聯,外宿生將近有七成屬於高頻率外食群組。

英文摘要

Nutrition is an important issue in human ecology. Students in the College of Human Ecology should learn nutritional knowledge, attitude and practice for their specialized field. The purpose of this study was to understand students' perception of nutrition knowledge, dietary attitudes, and intake quantity of the six food categories in the College of Human Ecology. The difference or correlation between personal profiles and the categories were evaluated. The data was collected from 376 effective questionnaires conducted on college students in Taipei. Descriptive statistics, t-tests, ANOVA, Scheffe tests and chi-square analyses were used. The results showed that college students behaved well on the perception of nutrition knowledge and dietary attitudes, but are not balanced in the intake of the six food categories. Students who lived with families ate more balanced foods than those who lived away from home. Female college students, ages 22 and older who lived away from home performed better in some nutrition perception and dietary attitude aspects than others. Students' meal-eating frequency was significantly related to the school systems they were in. Over 30% of night school students were categorized in the lowest meal-eating frequency group which is significantly higher than their day school counterparts. Dine-out frequency was significantly related to their housing situation. Almost 70% of students who stayed away from home were in the highest dine-out frequency group.
