花生膜之花青素經萃取及HPLC定性,其主要之單一花青素含量大於90%。經由光譜分析得知其aglycone為cyanidine,不含酸,醣基鍵結於3位,LC-mass及GLC分析結果顯示出其為cyanidine-3-glucose-xylose,1H-NMR顯示Cyanidine與glucose之鍵結為β form,總合以上結果而判定其結構為cyanidine-3-β-[xylosyl]glucoside。
A predominant anthocyanin was isolated from the purple-black seed coat of peanut using HPLC. Theanthocyanin was subjected to spectrophotometric analysis, controlled hydrolysis, LC-MS and NMR analysis.It was determined that its chemical structure was cyanidin-3-β-[xylosyl] glucoside.
