社會環境在轉變的過程中,廚師要不斷的充實自己才能跟得上時代的潮流,本研究之目的即在以臺灣地區觀光旅館廚師為研究對象,探討廚師接受教育訓練意願與其影響因素,採用問卷調查法,有效問卷418份,回收率為85.7%。本研究結果顯示(1)廚師在個人因素、社會環境因素、訓練因素、期望值以及家庭因素中,除了性別、同儕團體和排行對接受教育訓練意願無顯著關係外,其餘皆對接受教育訓練意願有顯著的關係。(2)廚師對整體接受教育訓練的滿意度有63.44%感到滿意。(3)廚師最希望接受教育訓練的願望是公司自行開班、專門撥一段時間、三天到七天以及餐飲專業訓練所佔的比率最高。最後就政府相關單位、觀光旅館業者與未來研究者提出建議,期能有所助益。

英文摘要

With the constant changes in the modern society, today a chef must incessantly improve himself in order to keep up with the trend of the times. The study focuses on the chefs in Taiwan's tourist hotels and investigates their willingness to receive training as well as the factors that will influence their decisions. This study employs the methodology of questionnaire survey, 418 of valid questionnaires were obtained with the return rate of 85.7%. The result of this study shows that: (1) In terms of personal factors, social environment factors, training factors, levels of expectation and family factors, except factors like gender, peer group and ranking have no significant relation to the chefs' decisions. All other factors possess significant relationship to their willingness to attend training programs. (2) 63.44% of chefs in the study are satisfied with the overall aspects of receiving training. (3)The biggest wishes for the chefs in terms of training programs are that their employers can establish their own training programs, and to allot a specific time for training, 3 to 7 days. Food & Beverage training programs are the favorites among the choices provided in the questionnaire. In conclusion this study provides related government agencies and departments, tourist hotels entrepreneurs and future scholars in this field with suggestions and the hope that they can be helpful to their pursuits.
