廣漠無涯的滄海,蘊育著難以量數的海洋生物。宋代因航海科技、撈捕技術的進步,可供應食用市場的海產大增。為滿足宋人的海產食用需求,漁民開始針對高經濟價值的海產,發展出各類養殖技術。透過撈捕及人工養殖,宋人可享用更多樣的海產品。透過保鮮、海產加工技術,內地也有機會享受多樣的海產品。海產品的奇特外形、生態及豐富的口感,常令文士讚嘆不已,故宋詩中頗多記詠之作。本論文以宋人描寫食用海鮮心得、烹調方法的詩作為討論依據。透過相關作品的深入解析,希望能呈現宋代的海洋飲食風尚。

英文摘要

Numerous marine creatures are bred in the vast ocean. In the Song Dynasty, due to the progress in marine navigation and fishing technology, the supply of seafood in the food market significantly increased. To meet the Song people's need for seafood, fishermen started to develop various aquaculture technologies for seafood of high economic value. With fishing activities and artificial aquaculture, the Song people were able to taste more diversified seafood. Food preservation and seafood processing technologies even enabled in-landers to have to an opportunity to taste diversified seafood. The strange appearance, ecology, and rich taste of sea- food frequently amazed literati. Because of this, seafood was frequently eulogized in poetry during the Song Dynasty. This study is based on Song literati poems about their impressions of seafood tastes and gastronomy, and presents findings from an in-depth analysis of relevant writings in order to reveal the seafood culture in the Song Dynasty.
