中文摘要

陳皮為柑橘脫水所製成之加工品,為常用的中藥材之一,常被用來治療消化道疾病及改善發炎等現象。
本試驗以國產柑橘類果皮為原料,將果皮進行熟成處理後,經熱風乾燥加工製成陳皮,分析多甲氧基類黃酮(polymethoxyflavones, PMFs) 含量及抗氧化能力。目前已完成11項柑橘類果皮製成陳皮,並與大陸新會陳皮做比較。結果發現,11項柑橘類果皮中,經過熟成處理所製成之陳皮,以扁實檸檬陳皮之總多酚類含量最高、總抗氧化能力最佳,並且可提升金桔、虎頭柑、檸檬和葡萄柚等果皮之氧自由基吸收能力達20-34%。柑橘類果皮中的PMFs含量以nobiletin為最主要的組成分,其中扁實檸檬陳皮nobiletin含量最高,是新會陳皮的2.5倍。本研究成果發現,用扁實檸檬果皮製成的陳皮,具有高抗氧化能力之外,亦富含PMFs及總多酚類含量,為未來值得關注與開發利用的題材。

英文摘要

Chenpi, a processed product of the citrus fruit, is one of the common Chinese herbal medicines and often used to treat digestive disorders and infection. In this study, peels of the indigenous Taiwanese citrus fruits were used as raw materials to make chenpi by hot air drying, and then the content of polymethoxyflavones (PMFs) and the antioxidant activity were analyzed. At present, chenpi has been made from the peels of 11 kinds of citrus fruits. Functional compoments and the antioxidant activity of 11 kinds of citrus peels after aging processing showed that chenpi made from Hirami lemon contained the highest total polyphenol content and trolox equivalent antioxidant capacity. Oxygen radical absorbance capacity of the chenpi made from Calamondin, Kotokan, Lemon and Grapefruit increased 20-34%. The primary component of PMFs in citrus fruit peels is nobiletin, and the Hirami lemon chenpi contained the highest amount of nobiletin, which was 2.5 times higher than that of Xinhui Chenpi. These results showed that chenpi produced from Hirami lemon has higher antioxidant activity and is rich in both PMFs and total polyphenol content. It is clear that further study and development of chenpi produced from Hirami lemons peels is warranted.
