For the Asians, food is a very important thing.
Especially, between various scenarios banquets, the
requirements of dishes become more important.
However, over the years, the experts design banquet
menus based on their experiences, and the situation
happens year by year. In today’s society, based on
considerations of health and taste, if we only depends on
experts’ experiences, it lacks math models’ analysis, and
it also fails to reach objective state. Therefore, the paper
uses ISM method in kansei engineering to analyze the
hierarchical relationship of frequently served twelve
dishes in Chinese banquet. It is a preliminary
exploration of mutual relationship between each dish. It
not only provides kansei aesthetic to customers, but also
provides quantitative reference to dish order and
changes in dishes of Chinese banquet. In addition, the
paper develops the Matlab toolbox to help large
numbers’ calculation and rapid analysis. Through the
practical example, the paper finds that some dishes
belong to the same hierarchy, and they may be
considered to be changed. Also, the paper finds the
dishes which can be omitted. Through the study on ISM
application to Chinese banquet dishes, it not only
quantifies the issues in uncertainty field, but also
enhances the extensiveness and practicability of the ISM
in the field of hierarchical analysis.
