  本研究旨在探討高職餐飲科職校學生營養知識、態度與飲食行為的現況,比較三者間的相關及對不同背景變項學生之差異情形。以臺北縣市高職餐飲科學生為樣本,發放1080 份問卷,有效問卷為943 份,回收率為87.31%。研究結果顯示:營養知識與營養態度間、營養態度與飲食行為有顯著正相關,而營養知識與飲食行為之間無相關性。營養知識之得分會因女生及較高年級而呈顯著較高。學生飲食資訊來源會受學校課程、師長、電視/廣播、網路、報章雜誌書籍時,使營養知識得分呈顯著較高。學生已修過西餐烹飪、餐飲安全與衛生,在營養知識得分顯著較高。營養態度量表之得分除受女生及較高年級,尚受實際體型為輕度肥胖而呈顯著較佳。學生飲食資訊來源會因學校課程、師長、家人、同學或朋友、電視/廣播、網路、報章雜誌書籍時,在營養態度上亦顯著較好。學生已修過中餐烹飪、西餐烹飪、餐飲安全與衛生,在營養態度上有顯著較好。學生飲食資訊來源為主要為師長及健康中心宣導,其飲食行為較佳;而若飲食資訊來源為電視/廣播時,飲食行為較差。

英文摘要

  This research was to explore the students’ knowledge of nutrition, attitude towards nutrition and their dietary behavior. The data was collected from the students of the department of food and beverage in Taipei, Taiwan. A total of 1080 questionnaires were distributed and 943 valid ones were collected, which result in 87.31% response rate. The results were shown that there are positive correlations between knowledge of nutrition and attitude towards nutrition and between attitude towards nutrition and dietary behavior. Also, there was no correlation between knowledge of nutrition and dietary behavior. The result of this study showed that female and the students from senior level obtained higher score on knowledge of nutrition scale. If the students’ food and beverage information were from the school lessons, teachers, television/radio programs, Internet, and books and magazines, their score would be significantly higher than others. Students who had taken the lessons on western cooking and food & beverage safety and sanitation obtained significantly higher score. In the scale of attitude towards nutrition, female, the senior students, and students who were slightly overweight had significantly higher scores. If the students whose information about food and beverage came from school lessons, teachers, family members, classmates or friends, television/radio program, internet, and books and magazines, they would have significantly higher score. In the dietary behavior, students’ score did not have significant difference based on their background. If the students’ information about diet came from the promotion of the health center, they would have more proper dietary behavior. However, if the students’ information about diet came from television/radio programs, their dietary behavior would be more improper
