  本研究利用甲烯藍溶液固定於多孔洞性載體的原理開發氧氣檢知劑,可用於檢測食品包裝內之殘餘氧氣。氧氣檢知劑以甲烯藍、葡萄糖、氫氧化鈉及紅色墨水所配製成,並選擇多孔洞性三氧化二鋁作為載體,當甲烯藍溶液(2 mg/mL)與紅色墨水的配方比例為2 mL:200 μL 時,在氧化後呈現顯著的顏色變化,此比例也用於隨後的測試。將氧氣檢知劑置於空氣中16 小時並分析其總色差變化,作為氧氣檢知劑偵測氧氣的靈敏性。結果顯示,以甲烯藍、紅色墨水與孔洞性材質結合製成之氧氣檢知劑可即時偵測氧氣,在無氧氣的狀態下氧氣檢知劑呈現紫紅色,在接觸空氣16 小時後則轉變成藍色。故本研究以著名的藍瓶實驗原理為基礎,利用甲烯藍與葡萄糖溶液的氧化還原反應加以改良,並將該系統整合到固相多孔洞性三氧化二鋁載體中,成功開發出非鐵系氧氣檢知劑。

英文摘要

  In this study we describe a design of an oxygen indicator based on incorporation of methylene blue solution with porous carrier. This device maybe used for detecting the residual oxygen in the food package. This oxygen indicator, formulated with methylene blue, glucose, sodium hydroxide and red ink, and aluminum oxide, was selected as porous carriers. Our preliminary results suggested that a mixture of methylene blue solution (2 mg/mL) and red dye at 10:1 (V/V) ratio showed the optimal indicative total color change, and this formula was then adapted for the subsequent tests. Detection of oxygen was analyzed by the total color change on the oxygen indicator, and sensitivity was determined by exposing it to air for 16 hours. The results demonstrated the capability and suitability of using the methylene blue-red ink mixture on a porous material to construct an oxygen indicator, which functions to monitor the residual oxygen in the food package. Oxygen indicator showed as dark red under anaerobic conditions and showed as blue after reacting with air for 16 hours. Therefore, this investigation is based on the famous “blue bottle experiment” using the oxidation-reducing reaction of methylene blue, glucose, aluminum oxide and oxygen to develop the non-ferric oxygen indicator.
