本研究為利用大豆粕作為基質,添加枯草桿菌 (Bacillus subtilis) 進行固態發酵,以產製發酵大豆粕 (Fermentedsoybean meal, FSBM),分析大豆蛋白降解的最佳條件,並配製飼料以提供離乳仔猪,評估對猪隻生長性能和血液抗大豆抗原IgG力價之表現。結果顯示,大豆粕含有53.5%起始水分較含36.5%者,經枯草桿菌發酵兩日後,有較佳之蛋白酶活性,與明顯的降解大豆球蛋白。而大豆粕53.5%含水量條件下,分別添加2.5%黑糖、葡萄糖、蔗糖和澱粉作為碳源,經由枯草桿菌發酵後,顯示不添加醣類的對照組,有較佳的蛋白酶活性之趨勢,且呈現較佳的大豆球蛋白降解程度。動物試驗方面,以最適化條件製備發酵大豆粕,大量生產並取代猪隻飼料中的魚粉和部分大豆粕。猪隻生長性能顯示,餵飼發酵大豆粕有增加每週採食量和體增重之趨勢。另外血清抗體力價分析顯示,發酵大豆粕組的抗大豆抗原IgG含量,於第二週和第三週皆比對照組呈現減低情形。枯草桿菌發酵大豆粕取代魚粉和部分大豆粕的動物試驗結果得知,添加10%枯草桿菌發酵大豆粕具較佳嗜口性,具有取代魚粉之潛能。

英文摘要

This study was to evaluate effects of soybean meal fermented by Bacillus subtilis on growth performance and the titers of the anti-soybean antigen antibody in serum of the weaning piglets. The results showed soybean meal with initial moisture of 53.5% exhibited higher protease activity and digestion of soybean globulin than that with 36.5% moisture. When 2.5% exogenous carbon sources, including brown sugar, glucose, sucrose or starch, was added, no increase protease activity can be detected. A piglets feeding experiment was performed by using B. subtilis fermented soybean meal to replace fish meal, and the results deomstrated a tendency towards increase feed intake and weight gain weekly, and piglets fed with fermented soybean meal revealed lower levels of serum anti-soybean IgG than control after the 2nd and 3rd weeks. Our current results imply that soybean meal fermented by B. subtilis improves the palatability of the feed and growth performance of weaning piglets, so it has high potential for fish meal substitution.
