中文摘要

亞硫酸鹽為被廣泛使用之合法食品添加物,可用來作為食品的漂白,且具有殺菌功效以及抑制氧化作用,防止酵素與非酵素褐變反應。但是過量的亞硫酸鹽會對身體造成不同程度的過敏反應,易使患者產生氣喘、呼吸困難,嚴重時甚至會造成死亡。亞硫酸鹽蒸餾方法不僅裝置複雜,樣品的檢測亦相當耗時。本研究利用電化學方法建立一套簡便、精準的方法,以鉑電極作為感測器檢測亞硫酸鹽之殘留量,藉由電流之變化推算亞硫酸鹽的含量,其最適偵測條件為0.6 V、47℃ 及pH值6,而最適浸泡萃取溫度及時間分別為45℃ 及20分鐘,稀釋倍數為20倍,檢測亞硫酸鹽之濃度範圍為5-1000 ppm (R2 = 0.9795; S/N = 3),偵測反應時間為60秒。本研究所開發之電化學檢測方法具有操作簡單、反應快速及低成本之優點,可用於金針花乾製品之亞硫酸鹽殘留量之檢測。

英文摘要

Sulfites have been widely used as an additive in food to prevent oxidation, bleach, inhibit bacterial growth, and control enzymatic and non-enzymatic reactions during production and storage. However, excessive sulfites might cause allergic reactions such as asthma, dyspnea and death. The distillation method for detection of sulfite in food samples not only requires complex devices, but also is time consuming. In this study, an electrochemical system equipped with a platinum electrode as the amperometric sensor was developed to determine the residues of sulfite in dried daylily flower. The changes of the current levels were used to calculate the concentrations of sulfite. The optimal experimental conditions were 0.6 V, 47oC and pH 6. Under the optimal experimental conditions, the response of the sensor to sulfite concentrations is linear over the range of 5-1000 ppm (R2 = 0.9795). The detection limit and response time for sulfite were 5 ppm and 60 s, respectively. The proposed sensor showed an alternative method with easy operation, rapid response, and low cost for the determination of the residues of sulfites in daylily flower samples.
