在中國傳統的飲食文化中,奉行的是將天、人與食物緊密關聯在 一起的整體思想,食物從來就不是脫離社會關係且功能單一的物品, 它不僅是歷代帝王政權建立和穩固的基礎,也是人們表達社會尊卑秩 序的重要載體。然而,自西方在全球推行工業化以來,人類的飲食生 活發生了根本性的轉變,這種轉變的核心特徵便是社會中人與食物之 間關係的分化和脫離。今天的食品問題以及食品安全觀念正在隨著世 界性的社會變遷和文化轉型發生重要的變革,而西方社會的現代食品 生產與管理機制似乎提供了我們一種可以參考的標準,但是中國人自古以來對食物的固有認識及飲食實踐也為我們提供了一種不可忽視的 思考邏輯。

英文摘要

In traditional Chinese food culture, people have always pursued an idea that heaven, people and food are closely linked together. Food is not a good with single function and has never been separated from social relations. It is not only the foundation on which ancient emperors founded their state and kept it stable, but also an important carrier of rank order in society. However, since the advent of the industrialization, humanity’s diet and lifestyle have radically changed. The core feature of this transformation is that the relationship between people and food becomes more and more separated. Today, with the worldwide social and cultural
transformation, food problems and safety concepts appear to be on their way to becoming vital issues. Although in the West modern food production and management mechanisms seem to give us a reference standard, the Chinese understanding of food and their dietary practices also provide us with a logic of thinking which should not be ignored.
