中文摘要

以三種包裝材料 (NY/PE、PE/NY/NY/PE、PET/(NY/EVOH/LDPE))、三種真空度 (0、600、760 mmHg) 及脫氧劑進行包裝米的貯存試驗,定期分析米的品質包括色澤、pH值、酸價、過氧化價、游離脂肪酸等,以瞭解貯存期間米品質的變化。試驗結果顯示,以過氧化價作為米的品質指標時,使用NY/PE包裝材料,在高溫貯存時 (40℃ ),過氧化價是0 mmHg > 600 mmHg加脫氧劑≧600 mmHg > 760 mmHg,然因NY/PE的氧氣阻隔性不佳,故脫氧劑的效能不明顯。另,當真空條件為600 mmHg時,使用氧氣阻隔性佳之包裝材料 (PET/(NY/EVOH/LDPE)) 的過氧化價則明顯低於NY/PE和PE/NY/NY/PE,無真空的情況下也低於NY/PE真空包裝。此外,高溫貯存米品質的劣變速度較室溫 (25℃ ) 為快,且使用脫氧劑包裝米的L值降低,a值增加,且有淡淡紅色的外觀。

英文摘要

The storage test of packed milled rice was conducted using three kinds of packaging materials (NY/PE,PE/NY/NY/PE, PET/(NY/EVOH/LDPE)), three levels of vacuum (0, 600, 760 mmHg) and O2-scavenger, and milled rice qualities (such as Lab value, pH value, acid value, peroxide value and free fatty acid) were regularly analyzed in order to investigate the changes of rice quality during storage. The results indicated that,with POV as an indicator of milled rice quality, the increase of POV is rather slow along with increasing vacuum levels while using NY/PE as the packaging material, and the existence of O2-scavenger did not lead to any significant impact. At the vacuum level of 600 mmHg, use of a packaging material with high oxygen barrier (PET/(NY/EVOH/LDPE)) led to POV value obviously lower than that of the other two kinds of materials (NY/PE, and PE/NY/NY/PE), and it is also lower than the case where vacuum packed NY/PE packages were used. The milled rice quality under high temperature storage (40℃ )would deteriorate faster than that under room temperature storage (25℃ ), while the use of O2-scavenger led to reduced brightness of milled rice, and a slightly reddish appearance.
