本研究藉由探討各夜市環境與發展形態的差異,分析逛夜市者對夜市環境的體驗,以期了解在逛夜市者心目中傳統夜市之環境體驗特性,以及其理想中夜市環境體驗之特性。研究架構參考環境知覺相關理論而發展,同時考慮實質環境因素與社會環境因素對夜市環境體驗之影響。有關環境體驗之感受則考慮「人潮」、「店面、攤位及商品」、與「巷弄、街道、及店面空間」等三方面之形容詞共十項因素作爲環境體驗之指標。研究以台北市內十九座夜市之照片爲輔助工具,進行夜市受訪者對照片中不同夜市環境之體驗調查。結果顯示,影響傳統夜市環境之主要因素爲商品的「雜亂便宜」、「新奇有趣」、「日常鄉土」、攤位的「傳統懷舊」、與人潮的「熱鬧忙碌」;而商品的「多樣化」、「日常鄉土」、與人潮攤販的「愉快悠閒」感則是受訪者認爲是理想夜市環境的主要因素。此外,在實質環境中夜市的形狀與邊緣地區學校、住家、廟宇的出現與否均會影響不同的夜市體驗;在社會環境中服飾類、休閒娛樂類、家庭服務類的攤販數量以及預估人潮數量的平方則會影響夜市環境的體驗。

英文摘要

This research discusses and compares several night stalls with their physical environment and the environmental perception of people's mind, in order to capture the environmental image of traditional night stalls and ideal night stalls. Based on environmental cognitive theories, research constructs a theoretical framework included the physical and social influential factors. Ten environmental perception factors are considered from three aspects, which are 'crowding', 'store, vender, and merchandise', and 'street, alley, and space'. A photography surrogate technique is adapted here to investigate the environmental experience of night stalls. The results show the perception of traditional night stalls are significantly influenced by five environmental factors, which are 'nasty and cheap', 'fancy and amusing', 'daily and indigenous', 'customary and nostalgia', and 'noisy and busy'. The perceptions of ideal night stalls are influenced by 'various', 'daily and indigenous', 'cheerful and relaxing' factors. In the physical environment, the results show the space pattern and edges of night stalls influence the perceptions significantly. And in the social environment, the quantity of clothing venders, entertaining venders, family service venders, and the square of estimated people all significant influence the perceptions.
