本研究之目的主要在建立一套以電阻抗感測儀器來檢測乳化系統之安定性,在研究中我們以傳統肉眼觀測、電導度計與電阻抗感測儀器系統來檢測不同乳化劑對乳化安定性之影響,藉此比較傳統乳化安定性檢測方法與電阻抗感測儀器系統之優劣。由實驗證實本研究開發之電阻抗感測儀器系統比傳統乳化安定性檢測方法具有小檢測體積、快速偵測與較佳靈敏性等優勢。
This study presents an electrical impedance sensing device to determine the stability of emulsion. We used thetraditional visual observation, conductivity, and electrical impedance sensing device to detect the effects ofemulsifi ers on emulsion stability. Experimental results confi rmed that the proposed electrical impedance sensingdevice has advantages of a smaller detection volume, faster detection, and better sensitivity than traditional methods.
