中文摘要

非都會區地方小吃餐廳之經營除可推動地方美食外,亦兼具地方觀光、休閒與文化產業之發展,其經營具有多元價值且富有時代意義;然而小吃餐廳因地處封閉且服務人力不易取得,使得其之服務品質一直受到極大的挑戰。本研究以個案研究方法探討非都會區地方小吃餐廳服務品質實施情形,在經由個案公司顧客之問卷調查,並利用敘述性統計、交叉分析、t 檢定、2檢定、單因子變異數分析、多元迴歸等方法進行資料處理。研究發現,非都會區小吃餐廳之經營,顧客對餐廳服務品質之關懷性滿意度不足;而影響顧客對服務品質整體知覺滿意度之構面依序為關懷性、可靠性、保證性。最後,就影響服務品質滿意度之因素提出建議,以提供相關業者參考。

英文摘要

The operation of Local cuisine restaurants plays an important role on increasing the opportunity of the local sightseeing, leisure, culture, and industry development, but it has been challenge in service quality. In this study, the case study focus on service quality of local cuisine restaurants in non-metropolitan areas. The survey was conducted and the data were collected by the questionnaire. Through descriptive statistics, cross-analysis, t -test, Chi-square test, analysis of variance, multiple- regression methods were used for data processing. The results present that the employees of the local cuisine restaurant sometimes fail to deliver better customer empathy in the non-metropolitan areas. Further, the crucial factors affecting the perception and the satisfaction of service quality for the customers are empathy, reliability, and assurance. The contribution of this study is finding out the key factors affecting the satisfaction of service quality of local cuisine restaurants in non-metropolitan areas and providing with the suggestions for the restaurants in the industry.
