中文摘要

臺灣辦桌文化的研究慣例,不是偏向質性訪談,就是取用量化問卷分析。然而結合質性與量化已是一個共識,辦桌不單是飲食行為或烹調方式,更牽涉到歷史性、社會性,聯繫到政策面與產業面,相關文獻錯綜複雜。在進行研究之前,勢必需要先將各領域、各層面的研究文獻重新進行系統化的梳理。因此希望透過本文,能夠將以往較受到研究者忽視的文獻資料,進行整理,雖然看似基礎但筆者認為這是一項不可或缺的重要研究工作,必須先確立基礎才能使後續延伸的研究框架更臻完善,研究設計更清晰有效。

英文摘要

The two courses of Taiwan Banquets(pān-toh) cultural research are Qualitative Research and Quantitative research. However, combining qualitative and quantification is a consensus. to do not only a simple eating behavior. Actually, Banquets (pān-toh) cultural is not only the eating behavior or the way of cooking, but involves the historical, social, linked to the policy side and the industry side, the relevant literature complex.
Before the study, the first will be needed in all areas, at all levels of the research literature systematic re-sort. So hope this article can be compared with previous literature, though it seems basic, but it is an indispensable and important research work, you must first establish the basic framework of the follow-up study in order to make the extension of perfected, research design more clearly and effectively.
