本研究目的為探討種植在臺灣不同地區的水稻穀粒中活性成分,例如生育醇(Toc),生育三烯酚(T3)和γ-谷 維素的含量差異,以及研究這些植化素與土壤性質和氣候條件的關聯性。結果顯示,不同栽培地點的稻米中 維生素E、Toc和T3含量有顯著差異,而γ-谷維素的含量則不受影響。所有稻米樣品中的主要維生素E類似物為 α-Toc和γ-T3。稻米中的總Toc,總T3和γ-谷維素含量分別為16.4-21.8 mg/kg、22.3-24.9 mg/kg和360-383 mg/kg。於 四個不同的研究地點,桃園地區稻米樣品顯示有最高的總維生素E、總Toc和總T3含量,此地之水稻在營養生 長期階段天氣較冷,降雨率也比其他地區高。研究也發現這些生物活性化學物質與土壤速效磷、鉀、降雨量 和溫度有密切相關性且不受水稻種植的位置影響,說明這些因子可能在水稻中Toc和T3的生合成上扮演重要之 角色。

英文摘要

This study aimed to examine variations in bioactive components such as tocopherols (Toc), tocotrienols (T3) and γ-oryzanol in rice cultivated in different regions of Taiwan, as well as examine the relationships of these phytochemicals with soil properties and climatic conditions. Results showed that the contents of vitamin E, Toc and T3, but not γ-oryzanol, in rice grains differed significantly between locations of cultivation. The major vitamin E homologs in all rice samples were α-Toc and γ-T3. Total Toc, total T3 and γ-oryzanol contents in rice varied at 16.4-21.8 mg/kg, 22.3-24.9 mg/kg and 360-383 mg/kg, respectively. Among the four sites of investigation, rice samples from Taoyuan, where the weather during the vegetative growth stage was cooler and the rainfall rate was higher, showed the highest total vitamin E, total Toc and total T3 contents. A close correlation was noted among the contents of these bioactive compounds, soil available P and K, rainfall and temperature, which suggested that they might play important roles in mediating the Toc and T3 biosynthesis in rice.
