中文摘要

真空包裝米能防止害蟲的生長及延長保存期限;但在打開米袋蟲卵亦會發生孵化為成蟲的情形。當溫度 超過60℃ 時,稻米中害蟲的成蟲和蟲卵將會因高溫致死,本研究之目的是利用一個40.68 MHz, 5 kW的射頻加熱 系統進行糙米之殺滅米蟲之研究。當射頻電極板間距由4.5 cm擴大至6 cm時,射頻輸出功率會呈現下降趨勢。 在射頻電極板間距5.5 cm下處理2 kg真空包裝糙米70 s可達到60℃ 以上,且穀蠹死亡率達100%,且在37℃ 下60 天儲存期間沒有蟲卵孵化,經射頻處理過後的糙米和未處理的控制組在水分含量、蛋白質含量、直鏈澱粉含 量、脂肪酸含量及食味值分數等之間是沒有顯著差異。

英文摘要

Vacuum packaged rice can prevent pest growth to extend shelf life, but the pest eggs in the rice may hatch once the bag opening. When temperature is above 60oC, adults and eggs of rice pest will be heated to die. The objective of this study was to develop the radio frequency (RF) thermal processing for disinfestation of brown rice. The power outputs of RF were decreased during the RF electrode gaps increasing from 4.5 cm to 6 cm. The 2 kg vacuum packaged brown rice reached above 60oC operating at 70 s RF heating with electrode gap of 5.5 cm, and obtained 100% pest mortality. There was no pest egg hatching during 60 day 37oC storage. There were no significant differences on moisture content, protein content, amylose content, fatty acid content and taste score between RF disinfestation and control brown rice during 37oC storage.
