中文摘要

近年來由於餐旅服務業之快速發展,帶動國內餐旅教育的興起與蓬勃發展。餐旅教育的重要性不僅在培育優秀的餐旅管理人才,更強調專業的知能與敬業態度之養成。有鑑於倫理教育是學校教育中極重要的一環,亦是餐旅教育的基石,其重要性應不亞於智育的培養,對我們未來餐旅專業人員的素質更有其關鍵性的影響。因此,本研究目的旨在探討餐旅倫理教育之現況、檢視餐旅倫理教育課程設計與教學方法、剖析餐旅倫理教育實施之困境與提升成效之方式,以深入瞭解學校餐旅倫理教育實施情形。為達研究目的,本研究設計採質性深度訪談法,以立意抽樣進行餐旅學群教師之個別訪談。研究結果希冀能提供餐旅課程規劃與設計之參考,以提升餐旅倫理教育之實行與落實。

英文摘要

In recent years, due to the fast growth of hospitality industry enhances the development of hospitality education. The importance of hospitality education cultivates students not only with management capability, but also professional knowledge and attitudes. Ethics education serves as the ground stone in school education, and has the critical impact on the quality of our future hospitality professionals. Therefore, the study aims to explore the understanding of hospitality ethics education, to examine curriculum planning and teaching methods for hospitality ethics education, to discuss the dilemmas for conducting hospitality ethics education and suggest the approaches for promoting ethics education. In order to gain an insight of hospitality ethics education, the in-depth interviews were conducted with hospitality educators to collect qualitative data. The results of the study can be used to enhance the success of planning for ethics education curriculum and implementing of hospitality ethics education.
