本研究係比較經過大豆初級選別機分級後之「合格豆」與「等外品」之性質,包含外觀、純度、完整率、石豆比例、顆粒大小、礦物質含量及一般成分等,並研磨為豆漿後比較濃度及固形物含量,作為分級豆加工利用之參考。結果顯示合格豆之外觀、純度、顆粒完整率、種皮完整性及百粒重等均較佳,且與等外品有顯著差異。合格品之石豆比例較低,粒徑分布及顆粒寬/長比值與厚/長比值顯示在花蓮一號與台南三號合格豆之圓潤程度較等外品佳。雖然外觀有差異,一般成分分析互有高低,但數值差異並不大。在加工為豆漿後,等外品豆漿之濃度與固形物含量稍低於合格豆,然可藉由提高用豆量加以補償。換言之,大豆初級選別機可有效將大豆分級,篩選出外觀優良的大豆,而外觀較差之的大豆,經過適當的用量調整後亦適用於加工利用。

英文摘要

Soybean graded into qualified and rejected ones by the preliminary soybean sorter developed by Hualien District Agricultural Research and Extension Station were compared for better understanding and utilization of the graded soybeans. The appearance, granular intact rate, granule weight and purity of qualified soybean were significantly better to those of rejected one. Ratio of stoned cell was lower in qualified soybean. The thickness/length ratio and width/length ratio of cotyledon of the qualified soybean were significantly larger than that of rejected soybean in strains Hualien No. 1 and Tainan No. 3. Certain characters in proximate composition of qualified and rejected soybean varied significantly but in a small difference. Concentration and solid content of soybean milk made with qualified soybean was higher to that of rejected soybean. However, solid content of soybean milk made with rejected soybean could be compensated by increasing the amount of soybean being used. In conclusion, as the result of grading with the preliminary soybean sorter, qualified soybean has a better looking compared to the rejected one. The rejected soybean is applicable for soybean milk processing by adjusting the amount of soybean applied.
