廚藝創新是廚師重要的職能,惟相關研究仍然有限。因此,本研究旨在探討國際觀光飯店廚師職場友誼、工作雕琢與廚藝創新職能間之關係。研究採用問卷調查法,以便利抽樣方式針對大臺北地區國際觀光飯店之正職廚師進行問卷,共計回收320份有效樣本。研究結果經結構方程模式分析顯示,職場友誼對廚師之工作雕琢行為具有正向影響,其次,廚師工作雕琢亦會正向影響其廚藝創新職能,然而職場友誼對於廚師之廚藝創新職能並不具顯著影響。此結果顯示職場友誼不會直接影響廚師之廚藝創新職能,必須透過工作雕琢中介方具顯著正向影響作用。本研究根據結果,進一步提出相關建議,期能提供學校教學、餐飲業者及內場廚師提升廚藝創新職能之參考。

英文摘要

Culinary innovation is an important area of vocational competence. Therefore, this study aims to better understand the relationships between workplace friendship, job crafting, and the culinary innovation competency of chefs in international tourism hotels. Using the purposive sampling method, a total of 320 valid samples were collected. To verify the hypothesis, results were analyzed with structural equation modeling. The results show that the construct of workplace friendship had a positive impact on the job crafting; and the job crafting had a positive impact on the culinary innovation competence of chefs. Chefs’ job crafting had a totally mediating effect on the relationship between workplace friendship and culinary innovation competence. Hopefully, the results may serve as a reference for hospitality schools to support and educate their students, and for the restaurant industry, as an aid to the enhancement of their chefs’ culinary innovation competences.
