本研究係以幾丁聚醣(Chitosan, CS)與沒食子酸(Gallic acid, GA)經由酯化反應，反應所得衍生物CS-GA，藉由傅式紅外線光譜儀(FT-IR)分析結構，抗氧化活性以DPPH游離基螯合來評估，最後再以接觸角來評估CS-GA的親水性。
英文摘要
In this research, CS-GA synthetic derivatives were prepared by the esterification reaction between chitosan (CS) and gallic acid (GA). CS-GA was characterized by Fourier transform infrared ray spectroscopy (FT-IR). Antioxidant activity was evaluated by DPPH (2,2-diphenyl-1-picryhydrazyl) radical scavenging assay. Hydrophilicity of CS-GA was evaluated based on the water contact angle.
