本研究以在餐旅產業實習之大學生為研究對象,探討大學實習生對餐旅實習環境之觀點及其與工作滿意度與服務品質之相關性。本研究問卷是採用期刊現成之量表修改成餐旅實習生適用之量表,採便利抽樣的方式進行問卷調查,受測對象為大學時期有餐旅相關經驗之實習生。共計發出實習生問卷450份,回收有效問卷為411份,有效回收率為91.3%。研究結果發現:實習場所之工作環境(場地設備、人際關係及教育訓練)對工作滿意度及服務品質有顯著正向影響;工作滿意度對服務品質有顯著正向影響。本研究冀望將分析結果提供給餐旅業者與即將實習的實習生作為實習上之參考依據,並創造研究之最大價值。

英文摘要

This research aims to explore undergraduate interns’ perception of hospitality intern environment and its relationship with job satisfaction and service quality. An existing research questionnaire was adapted for hospitality interns and was used to collect data through convenience sampling. The samples were interns who had worked in the hospitality industry during college years. A total of 450 questionnaires was distributed to hospitality staff, and 411 valid questionnaires were received, with a response rate of 91.3%. The results showed that: (1) internship work environment (yard equipment, interpersonal relation, education and training) has positive influence on job satisfaction and service quality; (2) job satisfaction has positive influence on service quality. The findings from this research are expected to provide practical strategies for hospitality industry as well as hospitality intern-to-be.
