餐飲行業一向被認為是勞力密集的產業,也因此人力培養對餐飲產業來說至關重要。然而,即便在餐旅相關大學與科技學校如雨後春筍般湧出之際,產業中仍不乏人力需求的困境,因此本研究主要目的是想利用延伸版的計畫行為理論,加入情緒智力與應對機制,對大學或科技大學生未來投入餐飲產業的意圖進行分析,本研究針對一家科技大學的現在與已完成實習的學生進行調查,共計回收302份有效問卷,再以結構方程模型進行分析,其結果發現原始的計畫行為理論對預測行為意圖並不佳,換言之,學生是否投身餐飲產業考量的多數是情緒方面的因素。

英文摘要

The catering industry has always been regarded as a labor-intensive industry, so manpower cultivation is very important for the catering industry. But even as food-related universities and technical universities spring up, the industry is struggling to find workers, therefore, the main purpose of this study is to use the extended version of planned behavior theory, add emotional intelligence and coping mechanism, and analyze the intention of university or science and technology students to invest in the catering industry in the future. This research is conducted on current and completed internship students in a technological university, a total of 302 valid questionnaires, then using structural equation model analysis, the results found that the original theory of planned behavior to predict behavior intention was not good, in other words, whether students in catering industry concerns most is the emotional factor.
