本研究旨在探討肥育期黑豬餵飼高纖維飼糧對肌肉顏色、組成及品質之影響。試驗選用 32 頭 平均體重 57.8 kg 之雜交黑豬(含 25% 梅山豬及 75% 杜洛克),閹公豬及女豬各半,逢機分 置於正常飼糧組及高纖維飼糧組,每處理四重複,每重複4 頭,試驗期間飼料及飲水採任食, 試驗至體重達 117 kg 時結束。試驗結束後每組犧牲 12 頭進行肌肉顏色、組成及品質測定。 結果顯示,肌肉水分含量與脂肪含量以高纖維飼糧組顯著較正常飼糧組為低(P < 0.05),但肌 肉大理石紋評分則以高纖維飼糧組顯著較正常飼糧組為高(P < 0.05)。屠後24 小時之肌肉pH 值與溫度及蒸煮失重以正常飼糧組顯著較高纖維飼糧組為低(P < 0.05)。背脂之 a 及 b 值以 高纖維飼糧組顯著較正常飼糧組為高(P < 0.05)。肌肉感官品評評分則以正常飼糧組顯著較高 纖維飼糧組為高(P < 0.05)。綜合本試驗之結果顯示,肥育期黑豬餵飼高纖維飼糧,雖可降低 肌肉脂肪含量,但肌肉品質及感官品評顯著變差。

英文摘要

The purpose of this study was to determine the effect of high fiber diet on meat color, composition and quality of finishing black pigs. 32 (16 barrows and 16 gilts) crossbred pigs (25% Meishan x 75% Duroc) with an average weight of 57.8 kg were randomly divided into control and high fiber diet group, which were allocated into quadruplicate with 4 pigs in each pen. Water and feed were provided ad libitum. Experiment was ended when pigs reach 117 kg, and 12 pigs were sacrificed in each group for further analysis. The results showed that, the moisture and fat content in meat were both decreased yet the marbling score was significantly increased in high fiber diet group (P < 0.05). The pH and temperature of meat at 24 hr postmortem and cooking loss were significantly lower in control group than high fiber diet group (P < 0.05). The a and b value of backfat color were significantly increased in high fiber diet group (P < 0.05). The score of meat sensory evaluation was significantly higher in control group than high fiber diet group (P < 0.05). Taken together, using the high fiber diet on finishing black pigs could reduce the fat content of meat, yet the quality and sensory evaluation score of meat were decreased.
